Baked Macaroni and Cheese

After trying out different Macaroni and Cheese recipes I finally found the one that tasted the best! I've altered the original recipe to fit my tastes.

Ingredients:
  • 1 3/4 cups macaroni (uncooked)
  • 2 eggs
  • 1/2 cup heavy cream
  • 1 1/2 cups milk
  • salt
  • pepper
  • paprika
  • cayenne pepper
  • onion powder
  • 1 cup smoked cheddar cheese (will be in specialty cheese section of the grocery store).
  • 1 cup medium cheddar
  • 1 cup colby and monteray jack

Directions:
  1. Preheat oven to 350 degrees.
  2. Cook macaroni to al dente. Drain and set to the side.
  3. In a bowl stir together the heavy cream, milk, medium cheddar, and colby & monteray jack cheese blend.
  4. Add salt, pepper, paprika, cayenne pepper, and onion powder (taste the mixture until you have reached desired taste).
  5. Whisk the eggs in a separate bowl then add to the mixture in the large bowl.
  6. Spray a baking dish (I use a 9x9) with non-stick spray or butter.
  7. Stir to combine the cooked macaroni with the mixture already in the large bowl.
  8. Pour the mixture into the baking dish.
  9. Top with the smoked cheddar cheese and a little more of the colby & monteray jack.
  10.  Bake for 40-50 minutes. Don't worry if it's not firm, it will firm up as it cools.
  11. Let cool for 10-15 minutes.
